“Paella is a celebration, a community event. We do a lot of paella for rehearsal dinners but, even more, I like to cook for the wedding. Sometimes people don’t think paella is elegant enough for a wedding, but it is. It’s a community meal that brings the crowd together in an intimate way. People remember the event, of course, but they also talk about the food years later.”
He likewise compares paella catering to a cooking show and loves to teach people about this traditional Spanish dish…and may even let you take over the paddle for a minute or two.
“Few people make authentic paella over an open fire. We’ve been using the same basic recipe for the fifteen years I have been making paella for bayleaf. It is a relatively simple dish - broth and bomba rice, chicken, Penn Cove mussels, vegetables, Spanish chorizo, saffron, and smoked paprika.”

Once a year you get a chance to come and eat our Paella and not have to host a party yourself! This year we've teamed up with the Coupeville Farm to School to help them purchase a commercial green house. They already have the spot, there is a seller working with them and big plans down the road to teach kids about where their food comes from and provide real food in the cafeteria.
